There are many banana cake recipes (I have a lot too), each of them different in detail. For me I love the one that uses a lot of banana as I love the taste of it. This time not only the taste of the banana is loaded into the cake, brown sugar add delicious taste and moisture into the cake too.
It's easy to make, as you don't need special ingredients or equipment, even for crush the banana. I use the hand mixer to beat the banana (well, your banana need to be ripe and it will be soft and easy to work with).
If you like to decorate, icing and banana chips can turn this plain and simple cake into something cute. But if you go for the taste, spread delicious lightly salted butter over the cake before serving is highly recommended.
Brown sugar Banana cake
Makes 8 (using 6x9cm mini loaf pan)
120g ................................ Unsalted butter
200g ................................ Dark brown sugar
2 ...................................... Eggs
300g ................................ Ripe bananas, peeled
230g ................................ All-purpose flour
1tsp ................................. Baking powder
......................................... Pinch of salt
30ml ................................ Milk
For decorating (optional)
......................................... Icing sugar
......................................... Banana chips
Preheat the oven to 190C
Butter 8 (6x9cm mini loaf pans).
Sift the flour and baking powder together.
Beat the butter with salt until smooth.
Add the brown sugar and beat until fluffy.
Beat the eggs together then add the egg slowly into the butter bowl.
Beat until combine.
Put peeled bananas into a medium bowl, use the hand mixer to crush the banana, then pour the banana into the bowl.
Beat until combine.
Pour half of the flour mixture into the bowl, fold to combine.
Pour the milk into the bowl, fold to combine.
Pour the rest of the flour into the bowl.
Fold to combine.
Divide the batter into the prepared pans.
Bake for 25-30 minutes or until the top of the cake spring back when touch lightly.
Remove from the oven let, rest for 10 minutes, then take the cake out of the pan and let them cool completely on a wire rack.
Mix the icing sugar with water (drop by drop) until the mixture is thick and smooth.
Pipe the icing over the cake and decorate with crushed banana chips.

omg!!!! its so yummy!!!!!! i make this today i love it!... although, advise putting on walnuts, almonds or cinnamon. was the only thing that was needed
