For me, living means spending time with something you love (and want to do, hehe). But with my lifestyle, sometime I feel tried, and want to take a rest. The best way to relax is baking delicious treats and enjoy it ^^.
Today, it's cookie, because it's easy and take so little time to make. I love childish sweets, all the chocolate in the supermarket aisle always make me smile, and use them for baking from time to time is like playing. But this cookie is not too sweet to enjoy, because it made from 70% dark chocolate. This recipe is special because it contains no egg, even people who's allergic to egg can enjoy it happily. Actually you can use other kinds of sweet or use chocolate chips instead of the Maltesers too, if you like.
Enjoy it with a glass of milk, or for grown up, hot tea or coffee is great too.
No egg double malt chocolate cookies
Makes 20-24 cookies
200g ........................... Dark chocolate (70%)
380g ........................... Sweetened condensed milk (1 can)
25g ............................. Ground almond (almond powder)
20g ............................. Horlicks
200g ........................... All purpose flour
1/2tsp ......................... Baking powder
100g ........................... Maltesers (chopped)
50g ............................. White chocolate (chopped if large)
.................................... Pinch of salt
Preheat the oven to 170C
Line baking pan with baking paper.
Put the butter and dark chocolate in microwavable bowl.
Heat in the microwave for 1.30-2 minutes (600w), remove from the microwave and stir until melt.
Mix in the Sweetened condensed milk and salt.
Pour the ground almond and Horlicks into the bowl, stir to combine.
Sift the flour and baking powder into the bowl.
Fold to combine.
Put both white chocolate and Maltesers into the bowl.
Fold to combine.
Scoop (I use 5.5cm scoop) onto the prepared baking pan, press lightly.
Bake for 12-13 minutes or until puff, remove from the oven let the cookies cool completely on the baking pan.
