Flourless Brownie Sundaes: Easy, lazy Sunday dessert!

 Sometimes all you want is easy dessert, something quick but good enough to make you happy. 

 So, for lazy Sunday, what is better than a piece of flourless brownie and a scoop of an ice cream ^^. This brownie recipe is very easy to make, it won't take more than 40 minutes of your time from start to finish. I serve mine with a scoop of Green tea ice cream (the recipe is here, you can use the store bought too) but you can use other flavor as long as you like it, haha.
Imagine the warm and soft chocolate brownie mix with cool (and start to melt, ^^), ice cream, I believe it will be one of the comfort food that you love to have it again and again.


Flourless Brownie Sundaes
Makes 6 (using Texas muffin pan)


60g ............................. Unsalted butter
60g ............................. Unsweetened chocolate
120g ........................... Granulated sugar
..................................... Pinch of salt
1 .................................. Egg
1 .................................. Egg yolk
1 1/2tsp ..................... Vanilla extract
20g ............................. Cocoa powder (Dutch process)
75g ............................. Chocolate chips
.................................... Ice cream, any flavors 
.................................... Chocolate sauce

Preheat the oven to 180°C
Brush large muffin pan (Texas muffin pan about 9 cm in diameter) with butter (I use silicone pan). 


 Put the butter and unsweetened chocolate in the microwavable bowl, then heat in the microwave (600w) for 1.30 minutes.
Remove from the microwave and stir until completely melt, then add the sugar and pinch of salt, stir until combine. Let the mixture cool for 5 minutes.
Add the egg and egg yolk, then stir until combine.


Sift the cocoa powder into the bowl, stir until combine. Pour the chocolate chips into the bowl, fold to combine.
Divide between the pan (about 1/4cup or 65g per 1 piece).
Bake for 15-20 minutes or until the top is shiny.
Remove from the pan (run a knife around the edge to release it), let cool on a wire rack for 1-2 minutes, then place on a plate and serve warm with a scoop of ice cream and chocolate sauce ^^.
