Cheesy bread: Lovely golden bread

Making bread is one of my life pleasure, I love mixing, kneading, shaping, and feeling the bread as it transform from a mass of flour into soft, pliable and smooth dough.

It's a kind of therapy, you don't need to think about anything else, just paying attention to what in front of you, try to feel it and as the bread develop, your feeling becomes better. 
Beside from making me feel good each time that I make some bread, I get delicious bread too ^^. 
I love trying new recipe, because for baking the different amount of each ingredient can make difference. For me the time that I try new recipe, it's an experiment, so I have so many recipes for one kind of bake good and it's your turn to try and decide which one you like most, hehe. I can't tell you that there is an ultimate recipe for something, because in the end it depends on your taste (and your taste depends on many things, your taste buds, your culture etc.). Like this bread, you can use many kinds of cheese, depend on which one you like, or the taste that you want ^^, but I suggest using mixture of mild and strong cheese is great because your bread will become too salty if you use a lot of strong cheese (but if it's what you want, go for it). The bread itself without the cheese is quite bland due to the small amount of salt, but it becomes balance when eating with cheese. 
Serve this on its own or with a bowl of soup, it's delicious both ways.



Cheesy bread
Make 23cm bread

 220ml ........................... Water
1tbsp .............................. Granulated sugar
7g .................................... Instant yeast
350g ............................... Bread flour
1/2tsp ............................. Salt
45ml ............................... Olive oil
225g ................................ Cheese of your choice, try mixing strong flavor and mild (I use Parmesan, strong Cheddar and mild Cheddar)


Put flour, instant yeast, sugar into a bowl, whisk to combine, add  salt whisk again. Pour the water and olive oil into the bowl. Use large spoon (or pastry scraper) to mix everything together, and knead briefly to bring all the ingredients together.


Take the dough out of the bowl and knead, knead by using the heel of your hands to compress and push the dough away from you, then fold it back over itself. Give the dough a little turn and repeat. Put the weight of your body into the motion and get into a rhythm. Keep folding over and compressing the dough. Knead for 10-15 minutes or until the dough is soft, pliable and smooth.
Oil a bowl, put the dough into the bowl, and roll the dough to cover the dough with olive oil.
Cover with plastic warp and let the dough rise for 1 hour or until double in size.
Line 23cm cake pan with baking paper.
 When the dough ready, roll into 30x20 cm rectangular.
Sprinkle the cheese on top of the dough, as much as the dough can hold.
Roll the dough from the long side, then cut into 8 pieces.
Place the dough into the prepared pan, and sprinkle with the rest of the cheese.
Cover with plastic warp and let the dough rise for 1 hour or until double in size.
Preheat the oven to 220°C.
Bake for 20-25 minutes or until the top is golden brown, if the top of the bread becomes brown cover it with a sheet of aluminium foil.
