Vanilla Fruit cake: Fruit cake with Vanilla Liquor

 I like to walk around the liquor aisle, well, a bit of alcohol in the dessert will make it more interesting, so each time that I got new liquor I'm so happy.

 This time is a bottle of Vanilla liquor, sweet and very fragrance liquor. After I got it I really want to use it, well drink it directly is not a bad idea but I try to use it for baking, haha.
I think about fruit cake, usually we use rum for soaking the fruit but it will be more fragrance and different if we use other kinds of liquor instead ^^. So, I started by soaking the candied fruits in the vanilla liquor, and use it for soaking the cake too. You can use other kinds of liquor too, if you want. 
Adding more or less of the liquor into the cake depends on your taste, but don't skip it, because the cake will be dry or if you don't want to add more alcohol, using simple syrup is a good choice too.


Vanilla Fruit cake: Fruit cake with Vanilla Liquor 
Makes 6


3/4 cup........................ Candied fruit, cut into small pieces 
.................................... (I use candied cherry and mixed peel)
55 ml .......................... Vanilla liquor
108 g ........................... All purpose flour
1/2 tsp ......................... Baking powder
2 .................................. Eggs
1/2 tsp ......................... Vanilla extract
70 g .............................. Unsalted butter, soft
75 g .............................. Granulated sugar
..................................... Pinch of salt
1 tbsp ........................... Lemon juice
1/4 tsp ......................... Lemon zest

For sprinkle the cake
30 ml ........................... Vanilla liquor


Put the candied fruits in a cup and pour the Vanilla liquor for 2 hours or overnight.
Preheat the oven to 180°C
Line cupcake tins with baking cups.
Sift the flour with baking powder.


Beat the butter with the granulated sugar and salt until fluffy and light in color, add vanilla extract, lemon juice, lemon zest beat to combine,  add egg then beat until combine.

 Put the candied fruit pieces into the bowl  (use only fruits not the liquor, keep the liquor for soaking the cake), with flour, fold to combine.
Spoon into the prepared tins, bake for  20-25 minutes or until the top of the cake spring back when touch lightly.

Mix 30 ml Vanilla liquor with the liquor from the fruits (you can add more or less depend on how much you will pour into the cake).
Use the toothpick to poke the cake, and pour about 1 tsp-1 tbsp (up to your taste) onto the cake, and let cool completely.
