Revisiting my Blog: Gâteau Moka – Pâtisserie Style Coffee Buttercream Cake

Time won't stop, and we have to keep on going. I loves that feeling, each day there are a lot of interesting things that I want to try. But we can't see the future if we don't know the past ^^. I miss the recipes that I had made, many of them  still excite me, and I want to do it again.


Gâteau Moka – Pâtisserie Style Coffee Buttercream Cake is one of them. I never made something that complicated before and after making this cake I fell in love with Pâtisserie Style cake. They need a lot of time and attention but everything's worth.
So this time, I came back to the recipe that I made it about 3 years ago and I still love it ^^. The cake is Biscuit d’amandes or almond sponge cake, but it's not the most time consuming step of the cake. The thing that makes this cake so special is the buttercream. It needs butter, Pâte à bombe, Meringue Italienne and Coffee syrup to make it.
The Pâte à bombe and Italian meringue are important in Pâtisserie Style desserts and cakes, they made from beating the egg yolks (Pâte à bombe) or egg whites (Italian meringue) with hot sugar syrup, this process will partly cook the egg and stabilize it.
