Gâteau Moka – Pâtisserie Style Coffee Buttercream Cake is one of them. I never made something that complicated before and after making this cake I fell in love with Pâtisserie Style cake. They need a lot of time and attention but everything's worth.
So this time, I came back to the recipe that I made it about 3 years ago and I still love it ^^. The cake is butter, Pâte à bombe, Meringue Italienne and Coffee syrup to make it.
The Pâte à bombe and Italian meringue are important in Pâtisserie Style desserts and cakes, they made from beating the egg yolks (Pâte à bombe) or egg whites (Italian meringue) with hot sugar syrup, this process will partly cook the egg and stabilize it.
