Lately, I love to make a sable-style cookie is the cookie. It is easy to make and easy to adjust both sweetness and flavor. As we need to refrigerate the dough before baking, we can control the time, and the last one, it can be kept longer than the soft cookie.
This time is an almond cookie. I roasted the almond and processed it with sugar to make roasted almond powder instead of using plain almond powder,
The cookie is more fragrant than a simple almond cookie. As I planned to cover the cookie with sugar, the cookie was not so sweet. You can skip the sugar-covering part if you want.
Roasted almond cookies
14 pieces
20 g ....................... Almond slices
10 g ....................... Icing sugar
12 g ....................... Granulated sugar
60 g ....................... All-purpose flour
1/8 tsp .................... Salt
1/8 tsp .................... Salt
50 g ........................ Salt butter, cold, cut into 1 cm pieces
5 g .......................... Egg white
30-40 g ................... Granulated sugar (for covering the cookies)*
30-40 g ................... Granulated sugar (for covering the cookies)*
* You can omit the covering part for a less sweet cookie.
Roast the Almond slices in an oven toaster for 7 minutes.
Let it cool before using.
Put the icing sugar, roasted almond slices, and granulated sugar into the mini chopper bowl.
Process together until fine.
Put the flour and salt into the bowl.
Process to combine.
Put the butter into the bowl.
Process until combined.
Pour the egg white into the bowl.
Process until the dough starts to form.
Remove the dough from the bowl and press with the palm of your hand.
Until smooth.
Roll between a sheet of baking paper until it reaches 1 cm. thickness.
Refrigerate for 1 hour.
Cut the dough with a 3.5 cm. cutter.
Gather the scarp and cut with the cutter until you use all the dough.
You will get about 14 pieces. Refrigerate for 1 hour.
Meanwhile, preheat an oven to 170℃
Bake the cookie in the 170℃ preheated oven for 17 minutes.
Let the cookies cool for 1 minute.
Cover the cookies with granulated sugar.
Ready to enjoy!
