When I say "S'more cookies," the first thing that comes to mind is probably marshmallows roasted over a fire until they're charred and fragrant with caramel.
Oozing chocolate and biscuits, these treats evoke the warmth of camping. Winter always makes me think of these things.
But camping is really not my thing, lol. I prefer staying at home, wrapping myself in a blanket and eating delicious food ^^.
So today, I'm sharing a warm and delicious treat with you: s'more cookies, which combine soft marshmallows, chocolate, and biscuits just like the one you want!
Starting with a perfectly not-too-sweet cookie dough, then mix it with chocolate and biscuits, then add a marshmallow as a filling. Once baked, the marshmallow collapses in the center, creating a soft, stretchy marshmallow with a sweet, chewy texture. And then there's the charred marshmallow on top, which adds both a fragrant and a burnt sugar flavor.
With this cookie, you can enjoy the warmth of a campfire without getting out of your blanket!!!!!!!
S'more cookies
Make 10 pieces
Cookies dough
50 g .............................. Digestive biscuit
105 g ............................. Unsalted butter
1/4 tsp ........................... Salt
1/2 tsp ........................... Vanilla Extract
40 g ............................... Brown sugar
60 g ............................... Granulated sugar
25 g ............................... Egg
175 g ............................ All-purpose flour
1/2 tsp .......................... Baking soda
50 g .............................. Chocolate chips
10 pieces ...................... Marshmallow (large size, cut in half before using)
Topping
...................................... Chocolate chips
Crush digestive biscuits into 1.5 cm pieces and set aside.
Put the butter, vanilla, and salt into a bowl. Beat until smooth.
Add both kinds of sugar.
Beat until smooth.
Put the egg into the bowl and beat to combine.
Sift the flour and baking soda into the bowl.
Fold to combine.
Add chocolate chips and crushed biscuits.
Fold to combine.
Cover with plastic wrap. Refrigerate at least 12 hours (or up to 36 hours). If you don't have time, refrigerate at least 3 hours.
Cut the marshmallow in half before using it.
Before baking, preheat the oven to170℃.
Divide the dough into 10 pieces.
Roll the dough into a ball and flatten the cookie dough. Place one piece of marshmallow in the center.
Wrap marshmallows in cookie dough.
Place on a baking sheet and flatten the cookie dough.
Place the rest of the marshmallow and more chocolate chips at the top.
Bake in the preheated oven at170℃ for 13-15 minutes.
Burn a marshmallow with a burner and let the cookies set on the baking sheet.
