Strawberry white choc mini muffin


Today, our muffin is coming in a mini size.


I bought this mini muffin pan about 2 years ago and rarely use it. The reason is so simple I keep it in the cupboard and just forgot, haha. But this pan is so cute, the mini size will make everyone think that they eat only a small amount (so they can eat more ^^). 
And the muffin recipe that I made is "Strawberry white choc mini muffin". This small muffin is packed with a load of flavor. Even though the list of ingredients is long, the recipe is simple and straightforward. 
I made strawberry sauce by cooking the strawberry and sugar in the microwave. In this method, we reduce a lot of liquid from the strawberry, so we can use more strawberries without adding dampness.
As the top of the muffin spreads into a mushroom shape, I recommend using a muffin pan rather than an individual muffin baking pan. 


Strawberry white choc mini muffin
Make 13-14 mini muffins


Strawberry sauce 
120 g ...................... Strawberry (hulled)
10 g ....................... Granulated sugar

Crumble
30 g ....................... Cake flour
25 g ....................... Granulated sugar
25 g ........................ Almond powder
15 g ....................... Unsalted butter
1/8 tsp .................... Salt

Muffin batter
30 g ........................ Unsalted butter
1/8 tsp .................... Salt
60 g ........................ Granulated sugar
1 ............................. Egg
110 g ...................... Cake flour
1 1/2 tsp ................. Baking powder
40 g ........................ Milk 
30 g ........................ White chocolate (chopped)
35 g ........................ Strawberry sauce 

Topping
................................ Waffle sugar


Preheat the oven to 190℃.
Line 13-14 mini muffin pans (4.5x2.4  cm. per pan) with Cupcake Liners.

Mix the strawberry with the sugar and heat in the microwave (600w) for 4.30 minutes.

Let it cool completely.


Make the crumble:

Put all the ingredients except the butter into a bowl and whisk to combine.

Put the butter into the bowl and mix with a scraper or fingertips.

Until the crumble formed.


Sift the flour and baking powder together. Set it aside.


Beat the butter and salt until smooth. Add the sugar.


Beat until light in color.


Add the egg and beat to combine.


Put half of the sifted flour mixture into the bowl and beat to combine.


Pour milk into the bowl and mix to combine.


Put the rest of the flour mixture into the bowl and fold to combine.


Put the white chocolate and 35 g of strawberry sauce into the bowl.


Fold to combine.


Divide into the prepared pans.
Spoon the rest of the strawberry sauce into the batter (press it into the batter lightly).


Top with the crumble and waffle sugar.


Bake in the preheated oven at 190℃ for 15-20 minutes.
