Sugar and butter bread


I love the soft and sweet types of bread, I know that it's packed with a load of calories, but I just can't stop eating !!!


One of my favorite simple sweets is sugar and butter toast, only a slice of white bread toasted with sugar and butter, it can make me really, really happy.

So, this bread is a more delicious version of sugar and butter toast, hehe.
The bread has a soft texture (adding cake flour into the dough makes the bread texture softer than using only bread flour because the cake flour has lower protein) and it's easy to hand-knead. 
Anyway, if you don't want to use your hand, ^^, you can knead in the bread machine (or a stand mixer) too. 
For the filling and topping, I use salted butter for a more complex taste (you can use unsalted butter if you want) I love the combination of salty-sweet and butter-rich taste.
Using waffle sugar makes the bread more cute but if you don't have it, simple granulate sugar can be replaced.


Sugar and butter bread
Makes 4 (14×7×4.5 cm oval pan )


Bread dough

216 g ................... Bread flour
24 g ..................... Cake flour
41 g ..................... Granulated sugar
5 g ....................... Instant yeast
4 g ....................... Salt
48 g ..................... Water
77 g ..................... Milk
43 g ..................... Egg
24 g ..................... Unsalted butter

Filling
60 g ...................... Salted butter (5 g x 12 pieces)

Topping
.............................. Beaten egg
.............................. Waffle sugar (or granulated sugar)
28 g ...................... Salted butter (7 g x 4 pieces)


Put both kinds of flour, sugar, and yeast into a bowl and whisk to combine. Put the salt into the bowl and whisk again.

Pour the water, milk, and egg into the bowl.

Mix to combine.

Remove from the bowl.

Knead for 7-8 minutes.

Or until smooth.

Put the unsalted butter into the dough. Knead for 5-6 minutes or until smooth.

Roll the dough into a ball.

Put the dough into a bowl, cover it, and let it rise for 60 minutes.

When the dough is ready.

Cut the dough into 12 equal pieces.

Roll each piece into a ball. Cover and rest it for 15 minutes.

Brush 4 of 14×7×4.5 cm oval pan with unsalted butter.

When the dough is ready. Pat the dough and place 1 piece of the butter in the center. Cover the filling.

Pinch to seal.

Place the dough into the prepared pan. (3 pieces per pan).

Cover and let it rise for 40 minutes.

Preheat the oven to 200℃.

Brush the top with a beaten egg.

Cut the top with scissors.

Place the salted butter in the center.

Sprinkle the waffle sugar over the top (on the center).


Bake in the preheated oven at 200℃ for 14 minutes.

Remove from the pans and let the bread cool completely on a wire rack.
