This cookie recipe is the answer to my niece's question when she asked me for an easy cookie recipe.
Well, I have a load of cookie recipes on my blog, and each of them is different ^^. It depends on what you have (select from the ingredients), the texture that you want: soft, crisp, or chewy, or the method that suits you. Even with the same ingredients you can get different textures from different methods too!
But this time, this cookie is sooooooooooo easy.
You don't have to think about anything, just beat it together, haha. You can beat the butter to get the texture of the cookie the way you want (longer for thinner, short for thicker) and if you want a crisper cookie, use more baking soda to make the cookie drier.
For the additional flavor, you can use chocolate, nut, or dried fruit, just remember not to add more than 80 g.

40 g ............................. Chocolate (any kind that you like)
40 g .............................. Dried fruits
1/2 tsp .......................... Vanilla extract
1/2 tsp .......................... Salt
30 g .............................. Granulated sugar
15 g .............................. Brown sugar
20 g............................... Egg
100 g ............................ Cake flour
1/8-1/4 tsp .................... Baking soda*
Before baking, preheat an oven to 170℃
Chop the chocolate and dried fruits into small pieces, and set them aside.
Beat the butter with salt and vanilla until smooth.
Put both kinds of sugar into the butter bowl and beat until fully combined.
Add the egg and beat until smooth.
Sift the cake flour and baking soda into the bowl.
Put the chopped chocolate and dried fruits into the bowl.
Fold to combine.
Use an ice cream scoop (4 cm.) or spoons to divide the dough into the sheet pan. When using spoons, use one spoon to pick up and another to push the dough onto the pan.
You will get 12-13 pieces.
Top with chocolate and dried fruits (15g).
Bake in a 170℃ Preheated oven for 14 minutes.
Let the cookie cool completely before removing it from the pan.
