I asked her what did you want me to make? And her answer was she had no idea, haha.
Lately, every time that she bought strawberries, I turned them into a strawberry shortcake. But this time I didn't want to make it.
So, I combined the strawberries with yogurt and lemon to make a very delicious, sweet, and tangy cake. And when eating it with whipped cream and fresh strawberries, it's more and more delicious!
I bake and serve the cake in the same pan (well, it's easy, hehe), but if you want to remove it from the pan and cover the whole cake with the whipped cream you will need more whipping cream and sugar (I think 50-70 g. of whipping cream and 5-7 g. of sugar).
You can use other kinds of fruit (blueberry, raspberry, cherry, etc.) for this cake too,
Strawberry yogurt cake
15x20cm (or 18x18 cm)
Cake
120 g ....................... Cake flour
1 tsp ........................ Baking powder
1 tsp ........................ Baking powder
80 g ......................... Unsalted butter
1/2 tsp ..................... Vanilla Extract
1/8 tsp ..................... Salt
70 g ......................... Granulated sugar
1 .............................. Egg
60 g ......................... Plain yogurt
20 g ......................... Lemon juice
120 g ....................... Strawberry (Net weight), cut into 0.5 cm slices
Whipped cream
120 g ....................... Whipping cream
120 g ....................... Whipping cream
12 g ......................... Granulated sugar
100 g ....................... Strawberry (Net weight), cut into 0.5 cm slices
................................. Almond, roasted and chopped
Preheat the oven to 170℃.
Brush 15x20cm (or 18x18 cm) with unsalted butter.
Sift the flour with baking powder and set it aside.
Beat the butter with salt and vanilla until smooth. Add the sugar gradually.
Beat until light in color.
Add the egg gradually and beat to combine.
Add half of the sifted flour and mix to combine.
Pour the yogurt and lemon juice into the bowl and mix to combine.
Add the rest of the flour.
Fold to combine.
Pour into the prepared pan and level the top of the batter.
Place the strawberry slices over the batter.
Bake in the preheated oven at 170℃ for 22-25 minutes.
Let the cake cool completely.
Put the sugar into the whipping cream and whip until soft peaks form.
