As there were a lot of cake, bread, and cookies I HAD to finish them before making something new.
Finally, I can clear all the tasks (or eat them all, haha), and now I can go back to my kitchen.
The first thing that I made was cheesecake!!!
Anyway, it's not a complicated recipe (and you don't need the oven too). Rare cheesecake that is set with gelatin is delicious and very easy to make. But only cheesecake can be too plain so I add red jelly and berries on top of it. It's cute and full of flavor at the same time.
For the cheesecake part, you can use powder or leaf gelatin, but for the jelly part, I suggest using the leaf one as I found that when using powder gelatin the jelly doesn't as clear as when I use the leaf kind.
If your berries are sweet you can use less sugar, but if they are sour adding more sugar is recommended.
Make the cheesecake.
Put the gelatin powder into the water.
Let it bloom for at least 5 minutes before using.
Remove the cake from the pan.
Berry Jelly Cheesecake
Make a 15 cm. cake
Base
80 g ....................... Digestive biscuits
40 g ....................... Melted unsalted butter
Cheesecake
45 g ....................... Water
5.2 g ...................... Gelatin
150 g ..................... Cream cheese
1/8 tsp ................... Salt
1/2 tsp ................... Vanilla extract
45 g ....................... Granulated sugar
150 g ..................... Whipping cream
1 1/2 tbsp ............... Lemon juice
Jelly
300 g ..................... Water
8.5 g ...................... Gelatin (leaf type)
50-60 g .................. Granulated sugar
1/2 tsp .................... Strawberry extract
................................ Red food coloring
250-300 g ............... Berries
Crush the biscuits with a rolling pin.
Mix the crushed biscuit with melted butter.
Pour into the prepared pan, and press to smooth the top.
Refrigerate until ready to use.
Put the gelatin powder into the water.
Let it bloom for at least 5 minutes before using.
Beat the cream cheese with vanilla and salt until smooth, add the sugar and beat until combined.
Heat the gelatin mixture in a microwave (600W) for 20 seconds, and stir to melt the gelatin.
Pour into the bowl. Beat to combine.

Add the whipping cream and lemon juice and beat to combine.
Pour into the prepared pan.
Refrigerate for 2 hours.

Put the gelatin powder into the water.
Let it bloom for at least 5 minutes before using.

Pour the sugar into the gelatin mixture and stir to melt the sugar.
Let it cool completely.
Mix the strawberry extract and red food coloring into the gelatin mixture.
Place the berry over the cheesecake.
Pour half of the jelly mixture over the berry.
Refrigerate for 1 hour.
Pour the rest of the jelly into the pan.
Refrigerate for 2 hours.
Warm the side of the pan.
