Custard Tarts

I have baked a lot of cookies lately, well it's easy to make, eat, and keep. I always have a jar of cookies in my kitchen all the time.


But you know me, I get bored easily, haha, so after making many cookies, I think it's time to make something else (anyway, I didn't mean that I wouldn't post more cookie recipes, ^^).
So today I made tart instead.
This custard tart is made from 2 parts, first: the baked tart pastry, and second: the custard. Actually, you can bake the tart in advance, and make the custard the day you want to serve. The custard in this recipe is very easy to make as it is made by using the microwave, and the working time is less than 10 minutes!!!!!
When you want to serve the tart, just pipe the custard into the baked tart shell, and burn it, that's all.
If you love the creamy texture of the custard cream, I think you will love this tart too.
PS. If you think your custard cream is too thick, you can adjust the texture by adding milk or whipping cream after it becomes cool.

Custard Tarts
Makes 5 pieces (8 cm tart pan)


Tart pastry
100 g ...................... Cake Flour
............................... Pinch of salt
30 g ....................... Granulated sugar
50 g ....................... Unsalted butter
1 ............................ Egg yolks
1 tsp ....................... Water

Custard Cream
2 ............................ Egg yolks
1/2 tsp ................... Vanilla extract
............................... Pinch of salt
20 g ....................... Cake Flour
45 g ....................... Granulated sugar
2 tbsp .................... Milk
200 ml .................. Milk

Finish
............................... Granulated sugar for sprinkle over the tart


Grease 5 (8cm.) tart pans.

 Put the flour, salt, sugar, and butter into a bowl.
Mix to combine.
 Put the egg yolk and water into the bowl.
Mix to combine.
 Remove the pastry from the bowl.

 Divide the dough into 5 pieces, and roll each piece into a ball.

 Roll the pastry between baking paper until it reaches 12-13 cm.

 Fill the prepared tart pans with pastry.

Prick with a fork.
Refrigerate for at least 30 minutes.
Preheat an oven to 190℃

 Put the egg yolks, salt, vanilla, sugar, flour, and 2 tbsp of milk into a bowl, and whisk to combine.

 Pour 200 ml of the milk into the bowl, and whisk to combine.

 Cover and heat in the microwave (600w) for 2 minutes.

 Remove from the microwave and whisk to combine.

 Heat in the microwave (600w) for 2 minutes more.

  Remove from the microwave and whisk to combine.

 Pass through a sieve into a bowl.

 Place a piece of plastic wrap directly over the custard cream, and let it cool completely.

Place paper cups over the pastry, and fill with baking beans.

Bake at 190℃  in the preheated oven for 15 minutes.

 Remove paper cups and baking beans.
 Bake for 10 minutes more.

 Let the pastry cool completely.

Remove the tart from the pans, and fill with the custard cream.
Sprinkle the sugar over the custard.

Burn with a blow torch.
