Maple Walnut Bread

Yesterday, my sister said that she wanted me to make bread.


When she says something like this, I know she doesn't want me to make sandwich bread, haha, but a bread that you can enjoy by itself.  ^^
So today I choose to make Maple walnut bread, the bread that contains sweetness (and lovely fragrance) from maple syrup, and richness from the walnut, and by adding walnut, the texture of the bread becomes more interesting too.
Because the shortening contains 100% fat (when the butter has about 80%) using shortening (I use King Rice bran oil shortening) to make bread makes the texture of the bread chewy (and delicious) with a more crunchy crust.
This kind of bread can be enjoyed on its own, or if you want to add more deliciousness (and more fat) serve it with salted butter is recommended!

Maple Walnut Bread
6 pieces


Bread
70 g ................... Walnuts
220 g ................. Bread Flour
10 g ................... Milk powder
2 g ..................... instant yeast (2/3 tsp)
3 g ..................... Salt
110 g ................. Water
25 g .................. Egg (half of 1 egg)
30 g .................. Maple syrup
25 g .................. King Rice bran oil shortening

Finishing
.......................... Egg for egg wash
.......................... Walnuts




 I use King Rice bran oil shortening.


 Finely chop 70g of the walnuts, and set aside.

 Put the bread flour, milk powder, and yeast into a bowl, whisk to combine.
Put the salt into the bowl, whisk to combine.

 Pour the water, egg, and maple syrup into the bowl, mix to combine.

 Remove the dough from the bowl.

 Knead for 2-3 minutes.

 And knead the shortening into the dough. 


Knead for 5-6 minutes, or until the dough became smooth.


Press the dough lightly and pour the chopped walnuts over the dough.

 And knead to combine.

 Brush a bowl with shortening.
Put the dough into the bowl, cover with plastic wrap.
Let it rises for 1 hour, or until double in size.


When the dough ready, remove from the bowl.
Divide the dough into 12 pieces.


Roll each piece into a ball, cover with plastic wrap, and let it rest for 15 minutes.


  Press the dough to 8 cm. round.




Stack 2 pieces of dough together.


Brush with egg wash, and press the walnut over the dough.
Make 5 cuts around the dough.

Cover with plastic wrap, let it rises for 30 minutes.
Meanwhile preheat an oven to 190℃.

 Bake for 15-18 minutes.
