Chicken Teriyaki Khao jee Rice Burger (Khao jee: Grilled Thai Sticky Rice)


Khao jee is  Northeastern Thai (Isaan) style snack, it made from Thai Sticky Rice that had been dipped in the egg and grilled.


Authentic recipe uses steamed sticky rice, and charcoal grill, but you can create easier Khoa jee at home too ^^. BUT !!!! mine is not Authentic because I want to use my Khao jee instead of the buns for my burger, so I chose cooking rice in the rice cooker not steaming it. I think it's a lot easier, plus you will get softer bun as the steamed rice will be drier. 
Using sticky rice, you need to soak the rice before cooking it, but it will depend on your rice, if it's new, the soaking time will be shorter. You can use Khoa Jee instead of burger buns for any recipe, for mine as my niece requested Chicken Teriyaki so I made it for her.

 Chicken Teriyaki Khao jee Rice Burger 
(Khao jee: Grilled Thai Sticky Rice) 
Serve 3


Khao jee (Khao jee: Grilled Thai Sticky Rice) 
1 cup (200ml) ............. Thai sticky rice 
150 ml ......................... Water
1/3 -1/2 tsp ................. Salt
1 ................................... Egg 

Chicken Teriyaki
3 pieces ....................... Chicken thigh
2 tbsp ......................... Sake
2 tbsp ......................... Mirin
2 tbsp ......................... Shoyu
1 tbsp .......................... Rice bran oil

Teriyaki sauce
1 tbsp .......................... Sake
1 tbsp .......................... Mirin
1 tbsp .......................... Shoyu
1 tbsp .......................... Sugar

Burger
..................................... Mayonnaise
..................................... Cheese
..................................... Salad leaves




 I use Thai Sticky Rice (Khao niao กข)


  Put rice in a bowl and pour water into the bowl, mix quickly to remove some extra starch.
  Drain the rice.
  Soak the rice in water (about 3 cm above the rice),  for 3 hours (in summer) 
or 6 hours in winter.
 Put chicken pieces into a zip lock bag with Mirin, Sake, and shoyu, knead lightly and let it marinade for at least 1 hour.



   Drain the rice.

Pour the rice and 150 ml of water into the rice cooker.
Cook the rice (standard cook).


 Place a pan over heat, pour the oil into the pan.
Put the chicken pieces into the pan, skin side down, cover with lid and cook for 3 minutes.


 Flip the chicken pieces cover with lid and cook for 3 minutes.


 Mix the teriyaki sauce ingredients together.


 Over the lid Flip the chicken pieces again, and pour the teriyaki sauce into the pan,
cover with lid and cook for 2-3 minutes .
 It's ready!


 Mix the cook rice with salt.


 Wet your hands with water, lightly press the rice into a ball, and Press into 8 cm round mold.
 You will get about 6 pieces.


 Dip the rice into the egg.


 Pour the oil into the frying pan, fry the rice until golden brown on both side.



Spread thin layer of Mayonnaise over the Kao jee, and top up with salad leaves, cheese, chicken teriyaki and another piece of Kao jee and enjoy !!!!!!!!!
