You can have it with a glass of milk for quick breakfast or with a cup of coffee for afternoon coffee break, well I think it's great at any time of the day, hehe. I'm one of the people who love to chew, so cookie with lot of fiber is the best for me, but sometimes buying different kinds of seed and cereal grain is not the good choice as we will have leftover (and it's more expensive). So, I choose to use Muesli instead of buying a bag of oat, seeds, and etc. You can buy a bag of Muesli of your choice, fruity, nutty or the one that you like. I use shortening in this recipe as I want to give alternative recipe for people who're allergic to milk product (or don't want to take milk product) but you can use butter in this recipe too.

MUESLI COOKIES
Makes 15-17
85g .......................... Shortening (Non-hydrogenated rice barn oil shortening)
20g ........................... Rice bran oil
1/2 tsp ....................... Salt
90g ............................ Brown sugar
90g ............................ Granulated sugar
1/2tsp ........................ Vanilla extract
1................................. Egg
1tbsp ......................... Water
100g .......................... All purpose flour
1/2tsp ........................ Baking soda
200g .......................... Muesli
60g ............................ Pecan nuts, chopped
And rice bran oil, (you can use other kind of non flavor oil).
Preheat an oven to 180 C
Beat the shortening, oil and salt together until smooth
Pour both kinds of sugar into the bowl with vanilla extract.
Beat until combine, pour the egg into the bowl with water.
Beat until smooth.
Sift the flour and baking soda into the bowl, pour the Muesli and pecan nuts into the bowl.
Mix to combine.
Scoop the cookies dough onto a baking sheet (15-17pieces)
Press lightly with a fork
Bake in 180C Preheated oven for 12-14 minutes, let the cookies cool on the baking sheet.
PS. The cookies will be soft when coming out of the oven, but it will set when cool.
