Something delicious, cute and easy to share and yes, easy to make too. Baking large pan of brownie is a good choice but you need to cut and eating can be messy. But with this mini brownie baking time is short, it's easy to make, because they are already in the mini case, no cutting and you can serve them with ease. With little effort you can turn them into a star of the party, black color ganache act as a canvas for glittering decoration.
This small brownie comes with delicious ganache, Irish cream liquor add intoxicate aroma but I let the choice to you ^^, if you don't want to use Irish cream (or don't have it), other kinds of liquor (nut, coffee or chocolate) are great choice too.
Baking small brownie is easy but the most important point is don't over baked it, or it will dry.
Mini brownies with Irish cream ganache
Make 14-16 pieces
65g ................................ Dark chocolate
15g .................................. Unsweetened chocolate
65g ................................. Unsalted butter
30g ................................. Brown sugar
70g ................................. Granulated sugar
......................................... Pinch of salt
1tsp ................................ Vanilla extract
1 ...................................... Egg
35g .................................. All purpose flour
1tsp ................................. Instant coffee granules
Irish cream ganache
45g .................................. Dark chocolate
40ml .............................. Whipping cream
15g .................................. Unsalted butter, soft
2tsp ................................ Irish cream (you can use, creme de cocoa, coffee liquor or other kinds of liquor)
Preheat the oven to 180°C.
Put baking cup in mini muffin tins
Put the butter with dark chocolate, unsweetened chocolate into the microwavable bowl, place in the microwave and heat on medium for 1-1.30 minutes or until completely melt.
Remove from the microwave, pour both kinds of sugar and salt into the bowl, stir to combine.
Pour the instant coffee granules into the bowl stir to combine, let the mixture cool a bit before adding the egg.
Add the egg and vanilla extract into the chocolate mixture, stir to combine.
Pour the flour into the bowl, stir to combine.
Spoon the mixture into prepared mini muffin tins.
Bake for 20-22 minutes or until the top of the brownie spring back when touch lightly.
Let them cool on a wire rack.
Make Irish cream ganache:
Put the dark chocolate into a bowl, heat the whipping cream until boil then pour into the chocolate bowl, stir until chocolate melt.
Put the Irish cream into the bowl, stir to combine, cut the butter into small pieces then put into chocolate ganache bowl and stir until combine.
Assemble:
Put the Irish cream ganache into the piping bag, pipe the ganache on top of the brownies.
