It depends on many factors, haha, anyway, I will do it if I have a chance.
Banana cheese cake, a cheese cake with a delicious taste of the banana, the sweetness of it and the fragrance will make banana lover happy ^^.
You can make it 2 way, in my recipe, I whipped the egg white to make the texture of the cake lighter, but if you love denser cheese cake, just put the whole egg without whipping it. Cheese cake is not bake until set in the oven, the cake will firmer after cooling and refrigerating, so don't over bake it.
I use small pan for testing the recipe, if you want to use 18 cm round pan, just double the recipe.
Banana cheese cake
Makes 14x11 cm
40g ................................ Cracker (I use Ritz crackers)
1/2tbsp .......................... Cocoa powder
15g .................................. Melted butter
160g ................................ Cream cheese
40g .................................. Sugar
50g .................................. Sour cream
1 ....................................... Egg, seperated
80g .................................. Banana, puree
1tsp ................................. Lemon juice
1tsp ................................. Rum
Preheat the oven to 180°C.
In a medium bowl, stir together the cracker crumbs and cocoa powder until blended. Stir in the melted butter.
Press the crumbs into the bottom of the pan, set aside.
Warm the cream cheese in the microwave for 30 seconds (or until soft but not melt), and put the cream cheese in the bowl, beat with 30g of sugar and sour cream until combine.
Stir in the egg yolk.
Pour the banana, lemon juice and rum into the bowl, stir to combine.
Whip the egg white with the rest of the sugar until ribbon (not soft peaks).
Pour the meringue into the cheese bowl and stir until combine.
Pour the mixture into the pan.
Bake for 30 minutes or until the top of the cake golden and the center still wobble slightly, let the cake cool completely and refrigerate for 3 hours before serving.
