抹茶ロールケーキ: Greentea roll cake, Coming back to something familiar!

I had some problem with baking lately, they didn't coming out as I expect, well, I'm in the bad baking week!

It's can come from the fact that I love to try new recipe, so with the recipe that I never made it before the result can be good or bad. Anyway, I still want to bake, haha, so when my sister said that she wanted to eat green tea roll,  I was happy to bake for her. I choose the recipe that I'm familiar with and add the green tea powder into it, ^^. The soft sponge cake is very easy to make, and it delicious every times, so I don't have to worry about anything. 
The filling is Italian meringue buttercream + green tea powder +Green Tea Liqueur = Green tea buttercream, something that I made many times before.
Finally it's something that I can make it and happy with the results, haha, eating it with a cup of hot tea and I hope it will put an end to my bad baking day too.
PS. For the buttercream, if you want you can use 3/4-1tsp green tea powder, but for me I serve it to my niece too, so the intense flavor is too much for her.






抹茶ロールケーキ: Greentea roll cake
Make 20cm cake



  

2 ...................................... Eggs
50g ................................. Sugar
30g ................................. Cake flour
2tsp ................................ Green tea powder (matcha: 抹茶)
......................................... A pinch of salt
20ml ............................... Whipping cream (warm)

Green tea syrup

20ml ............................... Simple syrup
2tsp ................................. Green Tea Liqueur (optional)

Green tea buttercream 

 40g ................................ Egg Whites
50g ................................. Sugar
1tbsp .............................. Water
115g ................................Unsalted butter
1/2tsp ............................. Green tea powder (抹茶)
1tsp ................................. Hot water
1tsp ................................. Green Tea Liqueur (optional)


Preheat the oven to 180°C. 
Line 23m x23cm pan with baking paper.
Sift the flour, green tea powder and salt together, set aside.



 Whisk the egg until lighten add the sugar gradually until thick and lighten (Thick ribbon stage).


Sprinkle the flour over the egg batter and fold to combine.
Take 1/4 cup of batter and mix with the warm whipping cream, fold to combine. Pour the batter back, and fold to combine. 
The batter will be smooth and thick.
Bake for 10-12 minutes until spring back when press lightly.
 Make the Italian meringue buttercream following the method here.
Mix the hot water with Green tea powder (抹茶), beat to combine, then add the Green Tea Liqueur (if using), beat until fully combine.
Sprinkle the cake with syrup, then spread the buttercream over the cake.


Roll the cake and refrigerate, until ready to serve.

My favorite are mini coconuts cup cake and brown auger chestnuts pound cake. They are so good. I love your recipe because most of them are not too sweet. I enjoy your recipe very much, even though I need to convert quantity to US cooking measurement.(^^;;

    If the cake is hard and break easily, it can come from over bake,try reducing the baking time.
