Almond Coffee Roll Cake: Nutty sweet roll cake

 I don't know why I can't stop thinking about baking something, seen like my imagination really love sweet things.

Almond Coffee Roll Cake
 When I read baking books or browsing through a magazine, I have to keep my notebook and pencil next to me, ^^ prepare for my imagination, haha.
For this time, I saw a photo of roll cake and I think um... I want to make it too. A roll cake with something special, and yes it doesn't mean complicating recipe.
Just a coffee flavored soft sponge cake, sprinkle with coffee syrup then cover it with coffee flavored creme au beurre and sprinkle with caramelized almond, simple ingredients but the taste is great.
The nutty and caramelized flavor of the caramelized almond go very well with the coffee flavor, bitterness and sweetness, the taste that can represent life ^^, but from my (cake) point of view, life had more sweetness than bitterness, hehe.




Almond Coffee Roll Cake
Make 30cm roll cake




Coffee flavored Soft sponge cake 

3 ...................................... Eggs
75g ................................. Sugar
60g ................................. Cake flour
......................................... A pinch of salt
3/4tsp ............................ Instant coffee granules
30ml ............................... Whipping cream (warm)


La creme au beurre (cafe)
30g .................................. Egg yolks
120g ................................ Sugar
50g .................................. Milk
200g ............................... Unsalted butter
35g .................................. Egg whites
1tsp ................................. Water
-coffee flavor
2tsp ................................. instant coffee granules
1tsp ................................. Hot water
2tsp ................................. Golden syrup

Coffee syrup
30g .................................. Simple syrup
1tbsp ............................... Coffee liquor (Kahlúa)

Caramelized almond
120g ................................. Almond, skinned and chopped
50g ................................... Sugar
50g ................................... Water
 1tsp ................................. Vanilla powder

Caramelized almond:







Preheat the oven to 180°C
Roast the nut in the oven for 8 minutes, take the nut out of the oven and mix with vanilla powder.
Prepare sheet pan.
Put water and sugar in medium saucepan, and bring to boil, let it boil for 30 seconds.
Pour the nut into the pan and stir to recrystallize the sugar.
Keep the heat low and stir until all the sugar caramelize.
Take the saucepan out of the heat and pour the nut over prepared sheet pan.
Let it cool completely before keep in airtight container. 



Make Coffee flavored Soft sponge cake:


Preheat the oven to 180°C. 

Line 30cm x30cm pan with baking paper.
Sift the flour and salt together, set aside.

 Whisk the egg until lighten add the sugar gradually until thick and lighten  (Thick ribbon stage).

Mix the instant coffee granules with warm whipping cream.
Take 1/4 cup of batter and mix with the warm whipping cream, fold to combine. 







Sprinkle the flour over the egg batter and fold to combine.
Pour the whipping cream mixture batter back, and fold to combine.



The batter will be smooth and thick.
Bake for 10-12 minutes until spring back when press lightly.



 Make the creme au beurre follow the method here. But the sugar for pastry cream will be 50g and 70g for making Italian meringue. 
Mix the hot water, instant coffee granules and golden syrup together, then add into the creme au beurre, beat to combine.




Sprinkle the coffee syrup over the cake, and spread the creme au beurre over the cake and sprinkle with Caramelized almond.
Roll the cake, and cover with  creme au beurre and Caramelized almond.

  6. มีคำามค่ะ พี่ปุ๊ก คือนู๋ชอบรสชาด เนื้อ Roll กาแฟอันนี้มากเลยค่ะ แต่ทำทีไรตอนม้วนมันแตกไม่เป็นท่าแทบจะพับไม่ได้เลยทกที อยากทราบว่า ตีไข่นานไป หรืออย่างไรคะ
