Chocolate coffee cream fancies: My cute little fancy cookies.

 My sister just want to eat some cookies, but I don't know what kinds of the cookies that she really want to eat. So, I just handed her a book, and told her to choose from it ^^.

 She choose many recipes, but this one caught my attention. It's cute and more important it has coffee flavor, I think that my mom will be happy with it too.
If you see the photo you may think that it should be very sweet, because there are a lot of icing on top of the cookies (something that I really afraid of too), but you can see in the recipe that the cookies contain small amount of the sugar. So, everything is balance, the bitter taste of the coffee make the sweetness more welcome. I think about using this cookie dough when I want to make the iced cookie ^^. 
When making the coffee cream, start with a tablespoon of milk and adding more until you get right consistency, you will be able to control it this way. And don't forget to wait until the icing dry before piping the melt chocolate, or the melt chocolate will drop into the icing instead of stay on top of it . 




Chocolate coffee cream fancies
Makes 40


Cookies
60g ................................. Unsalted butter
1tsp ................................. Coffee extract*
1tsp ................................. Milk
2 1/2 tbsp ....................... Caster sugar
.......................................... A pinch of salt
100g ................................ Plain flour
 Coffee cream
200g ................................ Icing sugar, sifted
2tsp .................................. Vegetable oil
1/4tsp .............................. Coffee extract*
1-3tbsp ............................ Milk 


60g ................................... Dark chocolate, melted


* If you don't have Coffee extract use instant coffee + boiling water instead.


Make the cookies
Beat butter, coffee extract, milk, salt and caster sugar until light and fluffy. 
Stir in flour, the dough will be firm.
Cover and refrigerate for 30 minutes.


 Preheat the oven to 180°C.
Line the baking sheet with non-stick baking paper, or silpat.
Roll the dough until 3mm thick.
Cut the dough into 3.5cm rounds, and place in the prepared baking sheet.
Bake for 8-10 minutes or until colored, stand the cookies on the baking sheet 5 minutes before transferring to wire racks.
 Make the coffee cream
Mix all the ingredients together add enough milk until the cream is spreadable.
Spread the coffee cream over the cookies, stand on wire racks until set.
Pipe melted chocolate over the cookies.
