Houjicha financier (ほうじ茶 フィナンシェ)

Lately, I love to use Houjicha for baking.

I added it to many kinds of baked goods, and find that it goes very well with dairy products. It can come from the fact that when making Houjicha, the green tea leaves are roasted over high heat, so the tea gets a caramel and nutty flavor from this method. 
When using Houjicha, I rarely replace the flour with Houjicha 1:1 as this tea is drier than green tea, and you might need less amount than green tea too.

Anyway, the recipe for today is very rich, so I don't have to be afraid much, ^^.

It's a Financier, a small cake made from egg whites, butter, and almond powder. (I love making it as I always have too many egg whites in my freezer!!!).
For a traditional Financier, you will need to make Beurre Noisette (or Brown Butter) to add a more lovely fragrance and taste to this little cake. But for this recipe, the smell and taste of the Houjicha are rich enough, so I skip this step. 

If you use traditional financier molds, you will get more financier than mine as the cake will be thinner, so don't forget to adjust the baking time to suit your financier too.



Houjicha financier 
(ほうじ茶 フィナンシェ)
Makes 9


100 g .................... Egg whites
100 g .................... Icing sugar
1 tsp ...................... Honey
23 g ...................... Cake flour
35 g ....................... Almond powder
12 g ....................... Houjicha powder
2.5 g (1/2 tsp) ....... Baking powder
100 g ..................... Melted and cooled butter





Preheat an oven to 200℃
Brush 9 of 8 x 5 x 2 cm. oval pan with butter.


Put the egg whites into a bowl.

Sift the icing sugar into the egg whites and whisk to combine.

Put the honey into the bowl and mix to combine.

Sift the cake flour, almond powder, baking powder, and Houjicha powder into the bowl.

Whisk to combine.

Pour the melted butter into the bowl.

Whisk to combine.

Divide the batter into the prepared pans.


Bake in 200℃  Preheated oven for 15-17 minutes.


Remove from the pan and let it cool completely.
