Brown Rice with Mushroom: One dish meal

 The best thing about one rice dish is, you don't have to put any effort into it ^^.


But it doesn't mean that you lack any attention, and care. It can be packed with load of good thing that you need, as in this recipe, you get all fibre, vitamin, protein and fat and yes, it's delicious too.
 Jasmine brown rice contains more fibre, minerals, and essential oils than the white rice, the only down side is it needs longer time to cook, but when you use rice cooker, it's not a problem at all. The only thing that you have to remember is you need about 1 hour for the rice to fully cook (may be shorter or longer depend on each rice cooker ^^). You can use other kinds of mushroom and meat to suit your taste too, well as I always said it's your recipe don't be afraid to play with it!


Recipe: Brown Rice with Mushroom

 Brown Rice with Mushroom 
Serve 3-4 


1 tsp ........................ Rice bran oil 
100 g ...................... Shimeji Mushroom, sliced the bottom off
100 g ...................... Enoki Mushroom, sliced the bottom off
4 .............................. Shiitake mushroom, sliced the bottom off, and cut into pieces
1 tsp ......................... Sesame oil
150g ......................... Chicken thigh, cut into pieces
2 1/2 tbsp ................ Mirin
2 1/2 tbsp ................ Shoyu
.................................. Salt, for seasoning
2 cups ....................... Jasmine Brown rice
4-5 cups .................... Water

For serving

................................... Spring onion, finely sliced



 Jasmine Brown rice
  Put rice in a bowl and pour water into the bowl, mix quickly to remove some extra starch.
 Drain the rice.
 Put rice into a rice cooker pan. 


 Place a pan over medium heat, pour rice bran oil into the pan.
Put all the mushroom into the pan with a pinch of salt.


 When mushroom soften remove from the heat
Pour into the rice cooker pan.

  Place a pan over medium heat, pour sesame oil into the pan.
Put the chicken pieces into the pan.


 When the chicken become golden in colour, remove from the heat.


 Put into the rice cooker pan.
Pour mirin, shoyu and water into the pan.


 Use normal function to cook rice.


 When ready, lightly mix the rice.


Put into a bowl, and  sprinkle with spring onion before serving.
