No Churn Caramel & salted nut Ice cream

 You may think that making ice cream at home requires a lot of equipments and time, but not all of the recipe are the same ^^.
Because with this recipe you will be able to create delicious ice cream without a machine. The base of this ice cream is whipped egg yolks and whipped whipping cream, so both of them contain a lot of air that you need to create great texture ice cream.
This time I made caramel flavour by adding caramel sauce into the ice cream but if you want to change into vanilla you can omit it and add the vanilla extract instead, easy, right? The caramel for this recipe is not as thick as other recipe (there is a lot of liquid), it will stay soft and has the same texture as the ice cream. For the nut part, you can use any kinds of salted roasted nuts, or omit it, well it's your ice cream do whatever you want ^^.
If you never made ice cream before this small recipe will be a great challenge! Now that I'm typing this blog my second batch of this ice cream is in the freezer, haha and this time I doubled the recipe as it's very, very delicious. 



No Churn Caramel & salted nut Ice cream



Caramel sauce
50g .............................. Granulated sugar
1tbsp ........................... Water (A)
2tbsp ........................... Water (B)
2tbsp ........................... Whipping cream

Ice cream base
2 ................................. Egg yolks
40g ............................. Granulated sugar
190g ........................... Whipping cream

30g ............................. Salted roasted nuts, chopped (I use almond)



 Put the water (A) and sugar into a saucepan.
Place over medium heat until caramelized.


 Meanwhile put water (B) and whipping cream into a microwavable cup, and heat in the microwave until boil.


 Pour the hot mixture into the saucepan.


 Stir until combine.


 Pour into a bowl and let it cool before using.


 Make the ice cream
Put the egg yolks and granulated sugar into a bowl, and beat until combine.


 Place the bowl over a pan of simmering water and beat until thick and  light in color.


 Remove from the heat and beat until cool.


 Whip the whipping cream until soft peaks formed.


 Fold 1/3 of the whipped cream into the egg yolk bowl.


 Pour the mixture back into the whipped cream bowl.
Fold to combine.


 Pour 3/4 of the caramel and chopped nuts into the bowl.


 Fold only 1-2 times.


Pour into the container, pour the rest of the caramel on top (optional), place a piece of paper directly over the ice cream and freeze until firm before serving.
