Double chocolate Pecan blondies

For me, Blondie is the mix between toffee and cookie. As it made from brown sugar it gives a slightly taste of caramel toffee, but the texture is close to fudge brownie.

I love to eat caramel toffee but making it is another story (well, I made it many times before). It's fun to make, but I just don't wan to eat all of it, haha, plus you need a lot of caution while playing with hot sugar, it's dangerous. 
So rather than making toffee, I chose to make blondie instead. Just melt the butter and add all the ingredients into the melted butter bowl, Voila, you got blondie batter ^^.
It's so easy to make and requires less time and attention. 
The key to delicious blondie is don't over bake it, as the inside of the cookie will be too dry, you need fudge like texture. 
Serve with hot black coffee or tea, and spend time with your favourite book, it's the best afternoon treat.



Double chocolate Pecan blondies
Make 16 pieces (use 20x20 cm pan)


115g .......................... Unsalted butter
200g .......................... Brown sugar
................................... Pinch of salt
1 ................................ Egg
125g .......................... Plain flour
50g ............................ White chocolate
75g ............................ Dark chocolate
75g ............................ Chopped pecans





Preheat an oven to 180C.
Line 20x20cm pan with baking paper.


 Put the butter into a bowl, and heat it in the microwave until melt.
Pour the brown sugar and salt into the bowl and stir to combine.


 Let the mixture cool for 5 minutes.


Put the egg into the bowl, and stir to combine.

 Pour flour, both kinds of chocolate and chopped nuts into the bowl.


 Fold to combine.


 Pour into the prepared pan, then level and smooth the top.


Bake for 25-28 minutes (the top will be dry but center will be unset).
Remove from the oven, let the blondie cool before cutting.
