Choux pastry is a bit tricky to play with...Hi, Vivi<br />Choux pastry is a bit tricky to play with ^^, but it's not hard to make it right. Because you can't judge it with the color, after the choux get the right golden color, the next step is to let the moisture out of the pastry, and the choux will be firm not soft.<br /><br />You should use a heavy sheet pan, to prevent the bottom to become burn.
