Brownie cookies (using whipping cream)

 It's fun for me to try a new recipe, esp something that I never made it before.




Well, you might say that brownie cookie is not new, yes it's not a new recipe only that this recipe didn't use butter. I think it makes me feel like I baking chocolate ganache into a cookie instead, hehe. 
It's rich and fudgy, with only 30 g of flour (plus 1 tsp of cornstarch) for 100 g of chocolate, I think you can imagine how chocolately this cookie is. Because it has a small amount of flour, the best way to keep its shape is by freezing it before baking, as the chocolate will become solid again when cool, and it will melt slowly in the oven. So, don't skip this step!!!
The cookie will be very soft when you take it out of the oven, so don't rush (or if you can't resist, you can eat it too, haha, it's a bit like cookie dough), just let it cool completely on the baking sheet and it will be firm enough to stay in shape.
If you don't think that the cookie is not chocolate enough, changing the chocolate chips to chopped high percentage chocolate bars is a good choice too.

Brownie cookies 
(using whipping cream)
Makes 6 cookies


100 g ................... Dark chocolate
............................. Pinch of Salt
40 g ..................... Rich's Gourmet Trio
50 g ...................... Granulated sugar
1 ...........................  Egg yolk
30 g ..................... All-purpose flour
1 tsp ..................... Corn starch
30 g ...................... Chocolate chips
35 g ...................... Walnut, chopped








 Put the chocolate in a microwavable bowl, heat in a microwave  (600W) for 2.30 minutes.
Stir until melted.


 I use Rich's Gourmet Trio in this recipe.


 Pour Rich's Gourmet Trio, salt and sugar into the chocolate bowl, stir to combine.


 Let it cool for at least 5 minutes.


 Mix in the egg yolk.


 Put the all-purpose flour, corn starch, chocolate chips, and walnuts into the bowl, mix to combine.


 Use 5.5 cm scoop to scoop the cookie dough onto a lined baking sheet.
You will get 6 cookies.


 Freeze for 30 minutes

Meanwhile, preheat an oven to 180℃.



Bake in the preheated oven for 14 minutes, and let the cookies cool completely on the baking sheet.
