Vegan Oat Soda Bread

It's time for vegan recipes again ^^.


Because in Thailand, we have Kin Ja festival (eating vegetarian food), around the end of September or the first week of October every year. Even at this festival we still want to eat delicious food and sweet, right? So to help my reader, today, it's a vegan recipe, that's very easy to make with easy to find ingredients too. 
Soda bread is a kind of bread that can be made without yeast (that we don't eat at Kin Ja festival), with baking soda and acid as a raising agent you can make it easily.
This time the soda bread is not only easy but it packed with a load of good things, such as whole wheat flour, oats, and nut milk ^^. Both of them add fiber and they make the bread more delicious with a nutty taste too.
Try not to use more flour than you really need, as the dough is quite sticky you may be tempted to add more flour, haha. Just pour the dough on a prepared baking sheet and pat it with floured hands until it formed a round shape. 
Note: you can use other kinds of nut milk in this recipe.

Vegan Oat Soda Bread 




200 g ........................... Soy milk

1 tbsp ........................... Vinegar
160-170 g ..................... All-purpose flour
1 tsp .............................. Baking Soda
1/4 tsp .......................... Salt
20 g .............................. Granulated sugar
115 g ............................. Whole wheat flour
45 g .............................. Rolled oats
20 g .............................. King Rice bran oil shortening
....................................... All-purpose flour, for sprinkle over the baking sheet and dough





Preheat an oven to 200℃ 

Line a baking sheet with baking paper.


 I use King Rice bran oil shortening.


 Mix the soy milk with vinegar, leave for 15 minutes.


 Put the all-purpose flour into a bowl, sift the baking soda into the bowl.
Put salt and sugar into the bowl, whisk to combine.


 Pour the whole wheat flour and rolled oats into the bowl, whisk to combine.


 Put the shortening into the bowl.


 Use your fingertips to mix until the mixture resembled breadcrumbs.


 Pour the soy milk mixture into the bowl.


 Mix until fully moisten.


 Sprinkle the prepared baking sheet with flour.
Pour the dough on the baking sheet.
Sprinkle the top with more flour if needed.


 Pat with your hands.


 To form a round ball.


 Cut the top of the dough.


Bake in the preheated oven for 30-35 minutes.
