Oat & Coconut Cookies

  Oat is one of the ingredient that I really love to use, well beside from baby food (food that very soft), chewy texture is what I always fall for too.


You can make many kinds of food (and sweet) from it, but the one that I love most is cookie. It makes cookie more delicious with interesting chewy texture. I made (and posted) many oatmeal cookies in my blog before, but I still have so many things that I want to try. This time I added coconut into the cookie, and yes it increases chewiness in the cookies too. 
If you want the cookies to be crispy, let the cookies cool completely and bake it again in 150℃ for 10-15 minutes, and you can use this method to dry it again if it become soft (esp. in high moisture country such as Thailand, ^^).
Serve it with a cup of coffee is what I highly suggest, as the sweetness of the cookies goes very well with the bitterness from the coffee.

Oat & Coconut Cookies
Makes 11 pieces



100 g .............................. All purpose flour
85 g ................................ Desiccated coconut
85 g ................................ Rolled oat
100 g .............................. Granulated sugar
1/4 tsp ............................ Salt 
100 g ............................... Melted Unsalted butter
1 tbsp ............................... Golden syrup (Or honey)
2 tbsp ............................... Water
1 tsp ................................. Baking Soda





Preheat an oven to 180℃
Line a baking sheet with baking paper.


 Put all purpose flour, desiccated coconut, rolled oat, sugar and salt into a bowl, and whisk to combine.


 Mix the water with baking soda.


 Pour melted butter, Golden syrup and baking soda mixture into the bowl.


 Mix to combine.


 Use 5.5 cm scoop to divide the dough into 11 equal pieces.


 Roll into a ball, and press with the into small round.


Bake for 15-18 minutes.
Let them cool completely on the baking sheet, it will become firm when cool.
