Vegan Oatmeal Pumpkin Waffles

 For the people who don't have any allergy, food something that is full of happiness.


But not all of us are the same, so when I received a request from one of my reader, I really wanted to make it! This time my target is to make a waffle without egg, gluten and milk, and it's the only thing that I think about for the last 2 weeks. 
As I don't want to use anything that's hard to find or add more chemical to my waffle. Finally I came up with the idea of using pumpkin, and oatmeal in my waffle. Oatmeal flour is very easy to make at home, just put it in a food processor and pulverize it, and you can use it instead of wheat flour. For egg I use ground flaxseed and pumpkin puree, that add both texture and flavour to the waffle. For milk, you can use other kinds of nut milk too, ^^ it's up to your taste.
Serve with load of syrup, and enjoy!

Recipe: Vegan Oatmeal Pumpkin Waffles

Vegan Oatmeal Pumpkin Waffles
Serve 2-3 people 



180 g .................................. Rolled oats
100 g .................................. Pumpkin, peeled, deseeded and cut into medium chunks
60 g .................................... Soy Milk (A)
50 g ..................................... Rice bran oil shortening
30 g .................................... Brown sugar
1/2 tsp ................................ Salt
2 Tbsp ................................. Flaxseed
280 g ................................... Soy Milk (B)
2 1/2 tsp  ............................. Baking powder
1/2 tsp ................................. Cinnamon powder
1 1/2 tbsp ............................ Vinegar (or lemon juice)
............................................. Rice bran oil for brushing the waffle pan





  I use rice bran oil shortening.


 Put the oatmeal into a bowl of the food processor.


And pulverize it.
 Put pumpkin into a microwavable bowl, cover with plastic wrap.
Heat in a microwave (600W) for 4-6 minutes.


 Beat with hand mixer until smooth, pour the Soy Milk (A) into the bowl, beat to combine.


 Let it cool before using.


 Put the rice bran oil shortening into a bowl, and beat until smooth.
Add salt and brown sugar, and beat until fully combine.


  Put the flaxseed into a bowl of the food processor, and pulverize it.


 Pour ground flaxseed into the bowl.


 Pour the pumpkin mixture into the bowl and beat to combine.


 Pour the  Soy Milk (B) into the bowl and beat to combine.


 Pour ground oatmeal into the bowl, sift baking powder and cinnamon powder into the bowl.
Fold to combine.


 Pour the vinegar into the bowl, fold to combine.


 Warm the waffle pan, and brush with rice bran oil.


 Spoon the batter into the pan, cover and cook for 4-5 minutes.


Ready !
