Oatmeal and Date cookies

Oatmeal is one of my favorite ingredients, chewy, a bit earthy ^^, and yes, it's packed with fibre and mineral too.


There are many kinds of oat in the market, but I love to use rolled oat as it will stay chewy when I put it in cookies or any kind of baked good. This time I made oatmeal cookie, that has a load of oat, but it will be too boring if you have only oat in the cookie, right? So, a bit of dried date is mixed in to give you a feeling of surprise, as the dried date is very sweet, imagine how happy you will be when you bite into it!. But beside from the natural sweetness, date is rich in potassium and other mineral too, ^^.

Recipe: Oatmeal and Date cookies

Oatmeal and Date cookies
Makes 16-17 pieces


90g .......................... Shortening (Non-hydrogenated rice barn oil shortening)

1/2 tsp ....................... Salt
90g ............................ Brown sugar
90g ............................ Granulated sugar
1/2tsp ........................ Vanilla extract
1................................. Egg
1tbsp ......................... Water
100g .......................... All purpose flour
1/2tsp ........................ Baking soda
200g .......................... Oatmeal
60g ............................ Dried date, pitted, and chopped






  I use this Shortening  (non-hydrogenated rice barn oil shortening).


 Preheat an oven to 180 C
Beat the shortening and salt together until smooth
Pour both kinds of sugar into the bowl, and beat to combine.


Pour the egg into the bowl with water and vanilla extract.


Beat until smooth.


 Sift the flour and baking soda into the bowl.


Pour the oatmeal and chopped dried date into the bowl.


 Mix to combine.
 Scoop the cookies dough onto a baking sheet (16-17 pieces) 


 Press lightly with a fork.


 Bake in 180C Preheated oven for 13-15 minutes.


Let the cookies cool on the baking sheet.



PS. The cookies will be soft when coming out of the oven, but it will set when cool.
