Molten chocolate lava cake

 This is one of the request that I got a long time ago, sometimes I really don't understand myself, haha, why I didn't post it in the blog until now.



 It's easy to make, but always looks stunning, the chocolate cake that has its own sauce inside or Molten chocolate lava cake. The key is the temperature and time, this cake baked at high temperature so outside of the cake set quickly but inside is not and it turn into a sauce when we cut the cake. Taking care not to let the cake bake too long, start checking at 12 minutes, and take it out as soon as the top of the cake set. The cake will cook by remaining heat after removing from the oven so serve it immediately is a must or the inside won't be as Oozy and Gooey as it should be.
I use ring mold for this recipe, because it's easier to take the cake out, no need to turn the pan ^^ or disturb the fragile cake. Just slide a blade of the knife of thin cake server under the cake then place it over a plate, and remove the mold (and the paper). 
This recipe is small enough but you can double the recipe easily too.


 Molten chocolate lava cake
Make 2 (6.5cm cake)


60g ......................................... Dark chocolate 55% 
60g ......................................... Unsalted butter
37g .......................................... Granulated sugar
1/2tsp ...................................... Instant coffee granules
................................................. Pinch of salt
1/2tsp ...................................... Vanilla extract
1 .............................................. Egg
1 .............................................. Egg yolk
15g .......................................... All purpose flour

Preheat an oven to 220C.


Line baking sheet with baking paper.
Brush inside of 2 ring molds with butter, then line the side of the molds with baking paper.
Place over a baking paper.
 Put both chocolate and butter in a microwavable bowl.
Microwave at medium power for 30 seconds (2-3 times) until fully melt.


 Pour the granulated sugar and salt into the bowl with instant coffee granules, stir until combine.
Let the mixture cool for 2-3 minutes.


 Pour egg, egg yolk and vanilla extract into the bowl, stir to combine.


 Pour the flour into the bowl, stir to combine.


 The mixture will be smooth.
Divide between prepared molds.
Bake for 13-14 minutes, start checking at 12 minutes, when the top of the cake is done remove from the oven and serve immediately.
