Simply delicious cake: Mini carrot cake

My nephew loves carrot cake, ^^, and yes because of that I want to make it for him too.

This cake contains a lot of carrot and  I like the texture of it, it's dense and moist, actually you can eat it without the frosting if you want too. The frosting is quite sweet, but it will be delicious for someone who have sweet tooth ^^. This cake can be made in only one bowl, and you don't need much equipment, so if you are new to baking, making the carrot cake can be great, because it's easy and always delicious, hehe. Having this carrot cake with a cup of hot tea is the best tea time treat. 
Note:  Next week, I will take Chocolate making class. So, I may not have a chance to post the recipe ^^, but I will let you know how my course and my life is (and I hope it will be a great week for me). 


Recipe: MINI LOAF CARROT CAKE

 Mini carrot cake
Make 4 mini loaf pan

1 ..................................... Egg
70ml .............................. Corn oil or rice bran oil
100g .............................. Brown sugar
150g ............................... Grated carrot (weight after grating)
50g ................................. Sultanas, raisins or dried cranberries
40g ................................. Walnuts, chopped
90g ................................. Self raising flour (or cake flour with 1/4tsp baking powder)
........................................ Pinch of salt
1/4tsp ........................... Baking soda
1/2tsp .......................... Ground cinnamon

Cream cheese frosting
125g ............................. Full fat cream cheese (not spreadable)
25g ............................... Unsalted butter
1/2tsp .......................... Vanilla extract
70-130g ....................... Icing sugar (depends on your taste)
........................................ Pinch of salt




Preheat an oven to 170°C.
Sift the flour, salt, cinnamon and baking soda together (if using baking powder sift it with flour here).
Beat the egg with brown sugar until fully combine, add the corn oil.
Pour the grated carrot into the bowl stir to combine, stir in the rest.
Pour into the mini loaf pans and bake for 35-40 minutes or until toothpick insert into the center come out clean. Let the cake cool before frost the top with frosting.

Make cream cheese frosting
Mix all the ingredient together.
Frost the cake with the frosting, decorate as you like.
