Strawberry Ice cream: Tangy sweet ice cream to brighten your day

 Do you think we need any reasons to eat ice cream? ^^ If you ask me I can give you some good reasons.

First it's delicious, second it cools us down in a hot day and third it makes us happy, hehe. I love to make ice cream for my family, well I'm lucky enough to have ice cream churning machine, so making ice cream for me is not hard. If you don't have the ice cream machine you still can make it,  but you will need more time. By freeze the mixture and take it out and whip with the hand mixture after 1 hour and do it for 4-5 times or until the mixture is smooth.
This time it's strawberry ice cream, that I want it to have brighter taste so I add the lemon juice into the mixture too ^^. I think this ice cream will make you happy with it sweet and tangy taste. My Suggestion, serve it with a big smile that's enough to make everyone happy, haha.

Strawberry Ice cream
Makes about 1 1/4 litre 


150g .............................. Granulated sugar
6 .................................... Egg yolks
1 ..................................... Vanilla bean, 
150g .............................. Whole milk
350g .............................. Whipping cream
500g .............................. Strawberries
1tbsp .............................. Lemon juice


Split vanilla bean in half with a knife and remove seeds. Mix vanilla seeds, egg yolks and granulated sugar together in heavy-bottomed saucepan. Boil milk and cream together. Carefully temper the egg yolks with the hot milk mixture by slowly adding the hot liquid to the eggs, whisking continuously.  Place over very low heat and cook, stirring occasionally with a wooden spoon or heatproof rubber spatula, cook the mixture over medium heat until it registers 83°C. Pour the heated custard through a fine-mesh sieve or strainer into a bowl. Let it cool completely and refrigerate.


 Puree the strawberry in food processor and pour into heavy-bottomed saucepan with lemon juice. Place over medium heat and cook until boil, lower the heat and let it simmering for 15 minutes. Pour the strawberry mixture  through a fine-mesh sieve or strainer into a bowl. Let it cool completely.
Mix the strawberry mixture and custard together and cover with plastic wrap, and chill in the refrigerator for at least 8 hours or overnight.
When ready, pour the chilled mixture into the ice-cream maker and process according to manufacturer’s specifications.
